Preheating last night's leftovers and calling it lunch when you’re in the office is so 2019. With covid still making people uneasy around shared kitchen equipment like microwaves, we’re sharing our 5 drool-inducing recipes that will create food-envy within your colleagues.

Stacked Salade Niçoise

This instagrammable lunch needs to be at the top of your list. It’s a cool and cold lunch idea layered into a mason jar. It’s packed with everyday fridge ingredients like hard-boiled eggs, peppers, olives and rocket. Topped with your choice of dressing, we recommend a balsamic-and-dijon dressing, this is a night before/do it yourself lunch you have to try. 

Greek Salad With Whole Pita 

Did someone say pita, Greek salad and hummus in the same sentence? YES please! Get yourself a pita and stuff it with fresh salad and your choice of protein; we might be biased but we’d opt for chicken, and if you’re vegetarian, halloumi is a great substitute and if you’re vegan Quorn meat is what you need in your life. This easy no-cook meal is tasty and easy to make - it’s a satisfying lunch to keep you going for the rest of the afternoon. 


You can’t go wrong with a classic sandwich for a super easy lunch option. Grab yourself two slices of bread and fill it with your favourite sandwich fillings. A few lunchtime favourites of ours include;

  • Crispy pancetta, chicken and Caesar dressing with crispy fresh lettuce
  • Creamy chicken filling, sitting on a bed of lettuce with toasted bread 
  • Red bell pepper hummus, lettuce and juicy tomato slices for the perfect veggie mix bursting with flavour 

Andalusian Gazpacho

If you’re missing soup, then Andalusian Gazpacho is the perfect thing for you. Blend up your favourite vegetables and enjoy slightly chilled, not ice cold, with your choice of bread roll. If you’re searching for a good recipe, we’d recommend Nigel Slater’s recipe. 

Pasta Salad

There are so many mouth-watering pasta salads to choose from and who’s to say you can’t have more than one pasta salad a week. Why not try artichoke with farfalle pasta or tomato, fresh veggies and big chunks of feta cheese.
